Apple Cake

Ingredients:

  • 1 cup whole wheat flour (atta)
  • 75 gm jiggery (gur) – grated (1/2cup)
  • ¾ cup yogurt
  • 1 apple- peeled and pureed (1/2 cup)
  • ½ apple- peeled and grated
  • ¼ cup oil
  • 2-3 tsp water
  • 1 and half tsp baking powder
  • ½ tsp meetha soda
  • 2 tsp chopped walnuts, optional
  • 1 and ½ tsp vanilla essence
  • ¼ tsp cinnamon poeder
  • A small loaf tin
  • 1 cup yogurt
  Directions:
  1. Mix gur and dahi well with an electric blender till it turns smooth and is no longer lumpy.
  2. Add oil. Beat well till well blended.
  3. Shift whole wheat flour, baking soda and baking powder, add to the yogurt mix. Beat better for 2-3 minutes till smooth and fluffy.
  4. Add 2-3 tsp water to get a soft dropping consistency. Beat well.
  5. Add essence, cinnamon and pureed apple and half of the walnuts. Transfer to greased loaf tin.
  6. Sprinkle the grated apples and some walnuts on the tops. Bake in a preheated oven at 160*C for 50-60 minutes.
