½ cup dalia (cracked wheat) – roasted in kadahi for 5-6 minutes till fragrant
1 cup grated cauliflower- soak in hot water for 10 minutes
1 cup home - made paneer or 1 large potato
1 ½ tsp salt
¾ tsp red chilli powder
2-3 green chillies – chopped finely
½ piece ginger chopped finely
1 tsp coriander ( dhania ) powder
½ tsp garam masala
1 ¼ tsp dry mango (amchoor) powder
2-3 tsp chopped coriander leaves
1 tsp lemon juice
1-2 tsp oil for frying
For serving – 2 tbsp hung yogurt mixed with 2 tsp hari chutney
Soak roasted dalia in water for 1 hour. Strain squeeze out excess water by pressing well.
Strain the soaked cauliflower. Press cauliflower in the strainer to drain off the water.
Squeeze homemade paneer through muslin cloth and mash. If using potatoes, boil a large potato and mash it get about 1 cup mash potato.
Mix cauliflower and all other ingredients to the dalia. Mix well
Form into 8 diamonds or square shapes patties. Remember to keep them thin as the sides may not get cooked properly if too high. Pan fry in 1 tsp oil in a non – stick pan till golden brown. Serve hot, dotted with chutney.
