Detox Spinach Soup
- 1 bunch of baby spinach (cleaned)
- ½ cup of chopped onion
- ½ cup of chopped coriander
- ½ cup of chopped carrots
- 3 cups of water
- ½ tsp of oregano
- 1 tbsp of olive oil
- 1 tsp of chopped garlic
- Salt according to taste
Sauté the chopped onions, chopped carrots, coriander, in a pan with the olive oil and chopped garlic.
Add water and oregano, simmer for one hour then leave to cool for half an hour.
Blend this to puree, then put back in a large pot on medium heat.
Add the spinach, cook until spinach is cooked and is soft, Serve hot!
