Recipe of Zucchini with Corn and Cilantro

Ingredients

  • 3 1/2 cups cubed zucchini
  • 1 cup frozen whole-kernel corn
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon fresh lime juice
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • Pinch of freshly ground black pepper
Directions
  • Heat a large nonstick skillet over medium-high heat. Then add oil to it.
  • Once the oil is hot, add zucchini and corn. Cook, till zucchini is crisp-tender while stirring occasionally. It may take 7 to 8 minutes.
  • Remove zucchini from heat, and stir in cilantro and remaining ingredients.
