Olive oil: 2 tbsp
sweet onion, thinly sliced: 1/2 (about 3/4 cup)
1 (16-ounce) can chickpeas, properly rinsed and drained
Ground cumin: 1/2 tsp
Salt: 1/4 tsp
Freshly ground black pepper
Cooked brown rice: 3 cups
Chopped pitted dates: 1/2 cup
Chopped fresh mint: 1/4 cup
Chopped fresh parsley: 1/4 cup
- Start by heating the oil in a large nonstick skillet over medium heat. Now, add Onion and cook and stir often until onion starts to turn brown. After that, remove it from heat and mix in chickpeas, salt, and cumin. You can also add fresh ground pepper according to your taste.
- Now, add rice, onion-chickpea mixture, mint, dates and parsley in a large bowl. Mix well until thoroughly combined. Now your dish is ready to be served.
