Recipe for 4 serves
Things you need:
2 tablespoons of butter or coconut oil. 8 eggs 1 sweet potato (peeled and sliced) 2 zucchinis (sliced) 1 Red bell pepper (sliced) 2 tablespoons of parsley (fresh) Salt and pepper - to taste
1. Take a pan and put it to heat on a medium flame. 2. Add oil, and then cook in it sweet potato slices for about 6-8 minutes. 3. Now add zucchini as well as sliced red bell pepper and cook for 4-5 minutes more. 4. In the meantime, whisk the eggs in a deep bowl. 5. Add to the whisked eggs salt and pepper. 6. Add it now to the vegetables being cooked. 7. Turn the flame to low and cook until just set, for almost 8-10 minutes. 8. Your frittata is almost ready, finish it until golden under a heated broiler. 9. You can cut the frittata into pieces and serve it with fresh parsley.
